This morning I started measuring out flour to make bread. I keep my flour in various air-tight tupperware, so imagine my surprise when I opened the container and found a dead little something laying in it. *bleh* Bread flour should have a high protein content, but this is not the protein generally intended.

Anyway, I sifted the flour I did land up using just to be sure that my bread would lack unwanted crunch. It’s amusing how sifting to remove wildlife-surprises is considered something generally not necessary. I beg to differ.

For those interested, the flour I was using (less than two weeks in my cupboard and still months away from its use-by date) was Snowflake’s, White Bread Flour.
